Making takeable lunches
Eggplant timbales stuffed with quinoa, chickpeas, diced tomatoes, shredded carrot, finely chopped zucchini and red pepper, and seasoned with a combination of cumin, turmeric, coriander, cinnamon, paprika and lemon juice. The idea is once I’ve baked them (in their own little muffin tins) I can freeze them and just pop them in a bag for on-the-go. The stuffing is done and it smells sooo good...

Yep, continued food journaling has definitely confirmed my sugar hypothesis: if I focus on controlling my sugar intake, my calorie intake controls itself. The more sugar I consume, the more calories I want to consume. If I limit my sugar, I’m much more content on many fewer calories.
I made some bad sugar choices this morning. When I opened the fridge, one of C’s bottles of orange soda slid right out (it should not have been put in the door, the opening between the shelf and the slat is bigger than the bottle) and when it hit the floor, the bottle didn’t break but it did pop the seal. Lunch before work

So I'm finally getting back on track with my food...
and even though I’m many data points away from my actual analysis (because I am secretly a math person) but the one thing that keeps jumping out at me is OH MY GOD SUGAR IS MY NEMESIS. It seems like if I get even a taste of sugar before noon I’m overeating like crazy all the rest of the day. If I keep it under a certain level, I’m fine, but man, it’s bad.

Working on Me
I’ve been intentionally AFK for a while, and I feel like it’s done me some good. Working with my therapist has been great, and I managed to make it through Christmas with only one little vestigial panic attack. Now that the worst of the holidays is behind me, I feel a little better about coming back on here.
